Ingredients
1 1/2 cups sweetened flaked coconut, Baker's®
8 ounces vanilla-flavored candy coating
4 1/2 cups half-and-half
1 1/2 cups coconut rum, Malibu®
3/4 cup white chocolate liqueur, Godiva®
Directions
In a medium bowl, place coconut. In another medium microwave-safe bowl, microwave candy coating according to package directions until melted. Stir until smooth. Dip edge of glasses in candy coating and in coconut flakes. Let stand.
In a large pitcher, combine half-and-half, rum, and white chocolate liqueur, stirring well. Pour into prepared glasses.
Note: To make ahead, cover, and chill half-and-half mixture until ready to serve.

Lemonade Mojito
Lemonade Mojito
Serves 20
Mint leaves (bunch)
1 cup sugar
1 cup water
5 cups club soda
4 cups vodka
4 cups fresh lemon juice
½ cup superfine sugar
First, prepare sugar syrup: Heat the first cup of sugar and water over low heat, stirring with a wooden spoon until sugar has dissolved. Stop stirring and increase heat to medium. Simmer 2 minutes. Remove from heat and let cool; refrigerate 2 hours before using.
In a large bowl, muddle ½ cup mint leaves with the sugar syrup. Stir in club soda, vodka, fresh lemon juice and additional ½superfine sugar. Chill.
Pour into ice-filled pitchers with lemon rounds and mint sprigs; serve in tall glasses.

For Dinner
Chichen Tortilla Soup
Ingredients
2 tablespoons vegetable oil
1 small onion, diced
2 tablespoons minced garlic
2 jalapenos, finely diced
6 cups low-sodium chicken broth
1 (14.5-ounce) can fire roasted diced tomatoes
1 (14.5-ounce) can black beans, rinsed and drained
1 red pepper
1 green pepper
1 can of corn
3 chicken breasts, boneless and skinless
2 limes, juiced, plus wedges for garnish
Salt and freshly ground black pepper
1 cup roughly chopped fresh cilantro leaves
1 (8-inch) flour tortilla, grilled, cut into thin strips
1 avocado, pitted, sliced
1 cup shredded Monterrey cheese
Directions
In a large saucepan heat the vegetable oil. Add the onions and cook for 2 minutes. Once the onions have softened add the garlic and jalepenos and cook for another minute. Pour the chicken broth, tomatoes and beans into the pot and bring to a boil. Once at a boil lower heat to simmer and add your chicken breasts. Cook the chicken for 20 to 25 minutes. Once chicken is cooked remove from pot. When cool enough to handle shred it and set it aside. Add lime juice and fresh cilantro to the pot. In a serving bowl add a mound of shredded chicken. Ladle soup over chicken and top with a lime wedge, grilled tortilla strips, avocado slices and cheese.

1 1/2 pounds skinless boneless chicken breast
Salt and pepper
2 teaspoons cumin powder
2 teaspoons garlic powder
1 teaspoon Mexican Spice Blend
1 red onion, chopped
2 cloves garlic, minced
1 cup frozen corn, thawed
5 canned whole green chiles, seeded and coarsely chopped
4 canned chipotle chiles, seeded and minced
1 (28-ounce) can stewed tomatoes
1/2 teaspoon all-purpose flour
16 corn tortillas
1 1/2 cups enchilada sauce, canned
1 cup shredded Cheddar and Jack cheeses
Garnish: chopped cilantro leaves, chopped scallions, sour cream, chopped tomatoes

Coat large saute pan with oil. Season chicken with salt and pepper. Brown chicken over medium heat, allow 7 minutes each side or until no longer pink. Sprinkle chicken with cumin, garlic powder and Mexican spices before turning. Remove chicken to a platter, allow to cool.
Saute onion and garlic in chicken drippings until tender. Add corn and chiles. Stir well to combine. Add canned tomatoes, saute 1 minute.
Pull chicken breasts apart by hand into shredded strips. Add shredded chicken to saute pan, combine with vegetables. Dust the mixture with flour to help set.
Microwave tortillas on high for 30 seconds. This softens them and makes them more pliable. Coat the bottom of 2 (13 by 9-inch) pans with a ladle of enchilada sauce. Using a large shallow bowl, dip each tortilla in enchilada sauce to lightly coat. Spoon 1/4 cup chicken mixture in each tortilla. Fold over filling, place 8 enchiladas in each pan with seam side down. Top with remaining enchilada sauce and cheese.
Bake for 15 minutes in a preheated 350 degree F oven until cheese melts. Garnish with cilantro, scallion, sour cream and chopped tomatoes before serving.

sparkling strawberry lemonade
Sparkling Strawberry Lemonade
4-6 lemons, enough to equal 1 cup of lemon juice
1-1 1/2 c. simple syrup (recipe follows)
16 oz. container of strawberries, cleaned and hulled
1 quart sparkling water
Juice the lemons to get 1 cup of lemon juice. Blend the strawberries and 1/2 c. of the simple syrup in a blender or with an immersion blender, until smooth. Strain to remove the seeds. (I didn't strain the seeds because I didn't have anything that small! It still tasted just fine!) Pour lemon juice, strawberry puree, 1/2 c. simple syrup, and sparkling water into a pitcher. Add more simple syrup if needed to achieve the sweetness you like. Add ice and chill.

1 part sugar to 1 part water
I used 3/4 cup sugar to 3/4 cup warm water. This can be done on a stovetop but it is much easier to just use warm water.
Of course I added all of the syrup because I like things sweet, but it wasn't too sweet at all, the perfect balance of tartness and sweetness! The sparkling water also gives it a little extra bite. Either way it was aaaamazing!
P.S. if you want to make it more exciting try vodka or rum for an adult drink yum

10 rules for being a human being

10 Hair Commandments
I.Thou shalt be thankful for the hair that adorns thy head. Your hair is your ‘crown of glory’ treat it as such.
II. Thou shalt not idolize the hair that adorns another’s head. The hair on your head is unique, it’s what makes you you.
III. Thou shalt not take the hair that adorns thy head in vain. Be aware of the damage that chemicals and heat can cause, some of the damage is irreversible

IV. Remember to take the necessary time to pamper thy hair. Create a routine, set aside specific days for sealing your ends, massaging, trimming, washing, conditioning and styling your hair. A healthy head of hair will be your reward.
V. Honor thy mother, father and ancestors for the beautiful traits that they have bestowed upon thee, one of which is your natural crown of glory. Wear your natural hair with pride.
VI. Thou shalt not attempt to use a fine-tooth comb to detangle thy hair. Even before using a wide-tooth comb, use your fingers to detangle, and when detangling always start from the ends and work your way up towards your scalp.
VII. Thou shalt not be ashamed to wear your natural hair in public. Wigs, weaves, braid extensions etc. are all wonderful temporary ‘protective’ and ‘transition’ styles, but they don’t compare to the beauty of your natural hair.
VIII. Thou shalt not kill the hair follicles on thy head – with high heat, harsh chemicals or tight styles. Stay away from pore clogging, dry scalp causing petroleum based products; use natural essential oil based ones instead. Be gentle with your hair, seek out professional stylists who have experience in styling your hair type.
IX. Thou shalt not bad mouth thy neighbor’s hair. Be respectful and encouraging to those who have not yet chosen to wear their hair natural. Negative comments will only turn them away from the natural hair community.
X. Thou shalt not covet thy neighbor’s hair; thou shalt not covet it’s texture, nor it’s curl pattern, nor it’s length etc. Appreciate the hair that you were blessed with. Try different styles and accessories that accentuate your very own personality and style

no sleep
Z kept me up all night long i worked 12 hours got off around 3 made it home by 3:30 a.m. and he was up to 5:15 am. missed church, brunch with my chica, now he is up and active by 11:30 am. i need HELP and SLEEP my husband is at work so i feel like i am sllep walking!

DEAR GOD
why have you put it in my heart to help people. i mean this is such a thankless job i do everyday i am underpaid over worked, drink to much and it deprives me of spending time with my Z.
why didn't u tell me that marriage is about comprimises and that even though it is two incomes, it equals more bills, and less money :(.
that you have to walk as one while continuing to hold on to your individuality.... and let your mate work towards their dream even if it doesnt benefit you all the time.
why didnt you show me how selfish i really am so i could have worked on it soooo long ago. why cant i just travel the world while being 130 pounds with size C chest and a big ghetto ass. but with an extremely tiny waist.
why cant i work a 9 to 5 job, 4 days a week, so i can have a 3 day weekend. but no i chose to be a police officer with long, so long hours......
i need another rum a coke
