Mint Julep

Mint Juleps for a Crowd
Adapted from Essentially Lilly: A Guide to Colorful Entertaining by Lilly Pulitzer

Ingredients

4 cups sugar
2 cups water
1 ounce (1 bunch) mint leaves, plus another additional bunch, for serving
Kentucky bourbon, such as Maker's Mark
Crushed ice

Directions

Stir sugar and water in a heavy medium saucepan over medium heat until sugar dissolves. Bring to a boil. Reduce heat to simmer gently for 10 minutes. Place 1 ounce fresh mint leaves into large bowl; pour hot syrup over leaves. Let cool to room temperature, then cover and refrigerate overnight.
Using a slotted spoon, remove mint leaves from syrup and discard mint. Pour mint syrup into large pitcher. Cover and refrigerate until ready to serve.
Set out pitcher of mint syrup, bourbon, and crushed ice. Arrange additional mint sprigs in a bud vase with water to keep them fresh. Allow guests to assemble their own cocktails, adjusting measurements to suit their own preferences. In general, fill glasses with crushed ice and add approximately 1/4 cup bourbon and 2 tablespoons mint syrup, then add as many mint leaves as desired and stir to combine. Garnish with a sprig of mint and enjoy.
Serves 12.

Coconut Lime Daiquairi

Ingredients

1/2-ounce simple syrup, recipe follows

2 cups crushed ice, plus extra for chilling glass

2 ounces coconut rum

1-ounce freshly squeezed lime juice, strained of pulp

Directions

1.Make the simple syrup: Place 2 cups sugar and 1 cup water into a small saucepan over high heat. Bring to a boil. Decrease the heat to medium and cook, stirring occasionally, until the sugar is completely dissolved, approximately 3 to 5 minutes. Remove from the saucepan and allow to cool completely. Syrup can be stored in an airtight container in the refrigerator for up to a month. Makes 3 cups.

2.If your glass is not chilled, do so by placing some crushed ice in it and set it aside while you prepare the cocktail.

3.Place 2 cups of crushed ice into a cocktail shaker. Pour the coconut rum, lime juice, and simple syrup over the ice, cover, and shake well. Remove the ice from your serving glass and strain the drink into it. Serve immediately.

strawberry vodka cocktail

if you love strawberries you'll definitely be a fan of this easy sipper. I combined vodka with lemon juice, muddled strawberries, and simple syrup. The whole thing is shaken and then strained into a chilled glass. It's a seasonal, slightly girlie drink that's delightfully balanced and ends up somewhere between too sweet and too potent. This strawberry vodka cocktail is just the thing to kick-start your weekend, so cheers! Grab a glass and get the recipe.

Strawberry Vodka Cocktail

Ingredients

3 strawberries, chopped
1 1/2 tablespoons Simple Syrup
2 ounces vodka
1 1/2 tablespoons fresh lemon juice
Ice
strawberry or lemon wheel, optional for garnish

Directions

Put the strawberries and simple syrup in the bottom of a cocktail shaker. Muddle well.
Add the vodka, lemon juice, and ice. Shake hard for 45 seconds and strain into a chilled martini, coupe, or old-fashioned glass.
If desired, garnish with a strawberry and lemon wheel. Enjoy immediately!

Makes 1 drink.

sparkling strawberry lemonade

Sparkling Strawberry Lemonade

4-6 lemons, enough to equal 1 cup of lemon juice
1-1 1/2 c. simple syrup (recipe follows)
16 oz. container of strawberries, cleaned and hulled
1 quart sparkling water

Juice the lemons to get 1 cup of lemon juice. Blend the strawberries and 1/2 c. of the simple syrup in a blender or with an immersion blender, until smooth. Strain to remove the seeds. (I didn't strain the seeds because I didn't have anything that small! It still tasted just fine!) Pour lemon juice, strawberry puree, 1/2 c. simple syrup, and sparkling water into a pitcher. Add more simple syrup if needed to achieve the sweetness you like. Add ice and chill.

Simple Syrup
1 part sugar to 1 part water
I used 3/4 cup sugar to 3/4 cup warm water. This can be done on a stovetop but it is much easier to just use warm water.

Of course I added all of the syrup because I like things sweet, but it wasn't too sweet at all, the perfect balance of tartness and sweetness! The sparkling water also gives it a little extra bite. Either way it was aaaamazing!

P.S. if you want to make it more exciting try vodka or rum for an adult drink yum
